Foodies at Holyrood played host to their very first Cupcake decorating event on Thursday the 18th February. And what a night it was….
We had the wonderful Liggy of Liggy’s cakes demonstrating with the help of her trusty assistant Kirsty.

The ladies that attended were greeted with a glass of bubbles and then shown to their seats, where there were 3 cupcakes awaiting them. Liggy then led the demonstration showing each of the attendees how to make beautiful iced roses and leaves to decorate each of their cakes. There was lots of giggles and chat as some really excelled at working with icing and some well… not so much!! The pots of glitter went down a real treat, I think some of the ladies maybe got a little carried away however….! The Cafe definitely still has a sparkle to it!
We were absolutely delighted with the running of the event – apart from the fact that it was over subscribed and unfortunately we had to tell some people that there were no spaces left. But we will make sure that they make the next one!

Cupcake Recipe
4 x Eggs
200g Self-raising flour
200g Golden Caster Sugar
Few drops vanilla Extract
- Preheat oven to 190 degrees C
- Line a muffin tin with paper cases (we love our spotty pink cupcake cases available in our foodie boxes!)
- Cream the sugar and butter together until pale in colour and light and fluff
- Gradually add the eggs one at a time beating them into the mixture
- Now add the flour and a few drops of vanilla extract using and fold into the mixture
- Pop the mixture into each of the individual cases and bake in the oven for 12-18 minutes or until golden brown and springy to touch.
- Once cooked allow to cool before icing in any way you fancy!!
As an extra wee help we’ve added the recipe for butter cream, so bad for you, but tastes soooo good!!
75g unsalted good quality butter
150g Icing sugar
Few drops of hot water
- Using an electric whisk combine all the ingredients together until the mixture become soft and fluffy.
- Add any flavouring or colouring that you want to make your cupcakes look extra special!

Hi just wanted to ask if such events are run just for adults, or whether ther is likely to be a junor chef version? I have a 12 year old who would LOVE to join in such events.
